About the Role
We’re searching for a Lead Bartender to take charge behind the bar and elevate the Aviary experience to new heights. You’ll lead by example, crafting memorable guest moments through world-class cocktails and genuine hospitality. Working closely with the Aviary Manager, you’ll shape our cocktail menu, mentor a passionate team, and maintain the exceptional standards that make Aviary a standout venue on the Gold Coast.

This is a hands-on leadership role for someone who thrives in a fast-paced, social environment and loves creating unforgettable experiences.

What We’re Looking For

• Strong cocktail knowledge and a passion for spirits and mixology.
• Proven experience in a senior bar or supervisory role within a busy, high-end venue.
• A confident and engaging presence behind the bar.
• Commitment to consistency, detail, and presentation.
• Leadership qualities that inspire, motivate, and develop others.
• Understanding of bar operations, stock control, prep, and service standards.
• Flexibility to work nights and weekends (when the rooftop truly comes alive).
• Bonus points if you’re creative, love experimenting with new flavours, and have a flair for presentation.
